Gut Balancing Salmon Recipe : It's Grill Time



It is grilling season. And rather than stick the typical burgers and BBQ chicken, let's change it up by grilling salmon!


Now, I was hesitant at first to grill salmon. Since I always have a fear of their flakes getting in the middle of the grates!


So, I figured to do them as skewers. But not just any skewers metal skewers that you can get just like the ones below from Amazon. They are reusable and the meat cooked more evenly throughout while on the grill.


This recipe calls for one of my favorite ingredients, Salmon. Which is a good source of Selenium. This is a mineral that is hardly talked about but is needed by the Thyroid to convert the essential hormones into their active state. Recent studies suggest that these hormones (T4 and T3) regulate the inflammatory response. And if our stress hormones aren't regulated, we will have an imbalance of bacteria in our gut! Let's support our thyroid with this yummy recipe!



Ingredients

Yield: 1 portion

  • 2 tbsp Parsley (chopped)

  • 1 tsp Sesame Seeds

  • 1/8 tsp Black Pepper

  • 1/8 tsp Sea Salt

  • 1/8 tsp Red Pepper Flakes

  • 2 tbsp Maple Syrup

  • 1 1/2 tsps Extra Virgin Olive Oil (plus extra for asparagus)

  • 5 ounces Salmon Fillet (sliced into 1 inch cubes)

  • 1/2 Lemon (sliced into thin rounds)

  • 1 Metal skewer

  • Sea Salt & Black Pepper (to taste)

  • 1 head broccoli, stems cut

Directions

  1. Preheat grill to medium heat - about 325'F

  2. In a mixing bowl, mix the parsley, sesame seeds, black pepper, sea salt, red pepper flakes, maple syrup and olive oil. Mix well. Add the salmon pieces and toss well to coat. Let it sit for about 20 minutes.

  3. Grab your skewers and slide on a piece of salmon, followed by a folded lemon slice. Repeat until all ingredients are used up and several kabobs are made.

  4. Trim your and wash off your broccoli and toss with additional salt, pepper and garlic powder with 4 sprays of olive oil. On a small perforated grill topper, evenly spread out your . Roast the broccoli on the grill for 5-minutes before placing the salmon on it.

  5. Place kabobs on one side of the grill. Grill both for about 3 - 4 minutes per side, or until salmon flakes with a fork. Remove from the grill and divide between plates. And as you're living them off - you'll get a few extra squeezes of lemon. YUM!
